Zesty Garlic Beet Salad
Your guests will never know how quick it took you to prepare this fun and flavorful beet salad!

Beets are one of those foods that whenever you mention them, you will likely get an “ewwww” response from some people. It’s kind of like cottage cheese — it seems to have a bad rap! Well, I love cottage cheese and I love beets!
Growing up, I used to eat beets directly from the can. My mother-in-law taught me how to use fresh beets — she loves to cook with red and golden beets. Several years ago, fresh vacuum-packed beets came out. These are a great compromise and I use them on a regular basis.
I love adding beets to salads, like my grilled chicken salad. Most often, though, I will just make a simple beet salad like this one. It’s so easy, you can even prepare it while the men are in shul — though if you want to make it in advance, it lasts up to a few days in the fridge.
When working with beets, make sure to wipe down any juice that gets on the counter right away, as it can stain, especially if you have porous stone countertops. If your counter does get stained from beet juice, Bar Keepers Friend is your best friend!

Zesty Garlic Beet Salad
Ingredients
- 1 (17.6-oz) package prepared beets (4-5 beets), cubed
- Juice of 1 lemon (approx. 2 Tbsp)
- Salt, to taste
- 2 cloves garlic, minced
- 1 Tbsp fresh parsley, chopped (or 1 tsp dried parsley)
- 1 Tbsp olive oil
Instructions
- Place beets in a bowl. Lightly toss with remaining ingredients.
