White Chocolate Strawberry Swirl Cookies
With the delectable combo of white chocolate and strawberry, these strawberry swirl cookies are a delicious and summery treat!
Something about summer and baked goods with fruit just go well together. Even though today in America you can pretty much get any type of fruit at any time of the year, strawberry and blueberry goodies still just seem made for summer! For those of you who feel the same way I already have several blueberry baked goods posted on my website (like this delicious lemon-blueberry Bundt cake or these wholesome whole-wheat blueberry muffins). I also have the most amazing blueberry crumb cake that I want to post, but there are only so many blueberry baked goods I can have on here. Eventually I will get to all of them, but I decided to go for something different with this summer baking post and do a strawberry cookie instead!
If you pay attention to my cookie recipes, you’ll get to know my little secret — most of them have the same or very similar base. I just change a few ingredients and they become completely new recipes. In truth swapping out certain ingredients and add-ins really does alter the whole recipe. In this case, the swirls of strawberry jam really make the texture of the cookie completely different. You wouldn’t know from tasting it that it’s the same base as some of my other cookies.
Since it’s actually quite similar, like all my cookie recipes, these strawberry swirl cookies are made with an easy one-bowl batter that comes together quickly. They freeze beautifully and can be made in advance. Likely you won’t be doing that, though, as they’ll get eaten before you have a chance!
I use strawberry jam for these cookies, but you can use any flavor you like — blueberry, apricot, cherry etc. When buying jam, I try to choose wholesome ones, without lots of real fruit and no high fructose corn syrup.
The trick to getting nice swirls is gently folding the jam in at the very end, after you’ve combined all the other ingredients. If you mix it too early or too hard, the dough will just turn pink and you won’t get those flavorful swirls of strawberry goodness.
I used white chocolate chips, as I love the combination of the strawberry and white chocolate, but feel free to add regular chocolate chips, chopped nuts or any of your favorite little treats to make these cookies your own!
White Chocolate Strawberry Swirl Cookies
Ingredients
- 1/2 cup oil
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 cups flour
- 1/2 tsp baking soda
- 1 cup white chocolate chips
- 6 Tbsp strawberry jam (heaping)
Instructions
- Preheat oven to 350°F. Line a cookie sheet with parchment paper.
- In a mixing bowl, combine all ingredients besides jam and chocolate chips, mixing with a spoon. When batter is mostly combined, mix in chocolate chips.
- Gently fold in the jam, being careful not to overmix. (You want a marbleized look. If you mix it too much, the dough will turn pink.)
- Drop spoonfuls of batter on prepared cookie sheet. Bake in preheated oven for 10-12 minutes.
