The Perfect Grilled Burgers
I couldn’t figure out why my hamburgers kept falling to pieces…but then I learned the secret to perfect grilled burgers!
If you had told me back when I started grilling 20 years ago that the best burgers consist only of ground meat and some spices, I would have said, “Ewww! I’m not eating plain beef. I like my burgers with lots of flavor!” For years and years, I made my burgers with eggs, breadcrumbs, herbs and, of course, lots of spices. But then I would get so frustrated when my burgers always, and I mean always, fell apart on the grill. I spoke to every grill aficionado I came across. They gave me all kinds of suggestions: preheat the grill, roll the patties tightly, use a grill sheet on the grill… But nothing worked, simply because I wasn’t addressing the actual issue, which was that there were way too many ingredients in my burgers.
Grilled burgers are meant to be plain and simple to allow the delicious flavors of the beef to come out while grilling. You’re supposed to let the meat do the job. You’re NOT making meatloaf or meatballs! When I finally figured this out, my burgers started coming out perfect every single time!
My grilled burgers consist of 3 ingredients:
Ground beef
Coarse sea salt
Union Spice Mediterranean Blend
That’s it!
So simple. Certainly makes my Sunday bbq prep go a lot faster!

In all seriousness, you can use any spice blend or spices. You can add paprika, cumin, chili-lime seasoning, your favorite coffee rub, or just stick to salt and pepper. Really anything works, as long as it’s being sprinkled on the outside and not mushed around on the inside!
When grilling burgers, just shape the patties. Don’t overmix them or they tend to become tough.
Make sure the grill is fully heated before you put the burgers on. You want to hear that gorgeous sizzle as they hit the grill!
I grill my burgers approximately 4-5 minutes per side, depending on my crowd. Some of the people I grill for like them rare, though I tend to cook them on the medium-rare side. I don’t need my meat “mooing,” as we like to say. If you like your burgers well done, which I find from experience is the way most people like them, then grill them 6-7 minutes per side.
I know it’s hard to time everything perfectly, but burgers are really best served right off the grill, so if I am grilling multiple things, I will save the burgers for last. As soon as they are ready, I cover the burger platter with foil to lock the moisture in.
I always like to serve my grilled food on a nice big platter. I usually find them in Home Goods but this oval platter is a good Amazon find.

Perfect Grilled Burgers
Ingredients
- Ground beef
- Coarse sea salt
- Union Spice Blends Mediterranean Blend (optional — can be subbed with any spices of your choice)
Instructions
- Form meat into patties directly from the package.
- Sprinkle with salt and spice blend or any other spices of your choice.
- Preheat grill to medium-high. Add burgers and grill for 4-5 minutes per side for medium-rare, 6-7 minutes per side for well done.
