Tender Grilled Beef Skewers with Peppers and Onions
These tender grilled beef skewers are made with thinly sliced NY strip steak, colorful peppers, red onion, and a flavorful garlic herb marinade.

I am always a little hesitant to make beef skewers. Not because I do not like them, but because the meat often turns out tough and chewy.
Then I recently came across a simple trick: instead of using thick beef cubes, slice the steak into thin pieces. The thinner meat cooks much faster, stays tender, and absorbs all the flavors of the garlic and herb marinade. It is such a game changer!
These grilled beef skewers are packed with flavor and make an extra-special addition to any summer BBQ. They can also be assembled ahead of time, so all you need to do is place them on the grill when you are ready to eat.

Tender Grilled Beef Skewers with Peppers and Onions
Ingredients
For the Skewers
- ½ pound NY strip steak
- 1 yellow bell pepper
- 1 red bell pepper
- ⅓ red onion
- Approximately 7 skewers
For the Marinade
- ⅓ cup olive oil
- 2 garlic cloves minced
- ½ teaspoon dried parsley
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon onion powder
Instructions
- Cut the steak against the grain into very thin slices. Cut each slice into small, thin squares and set aside.
- Cut the yellow pepper, red pepper, and red onion into large, evenly sized pieces.
- Thread two pieces of steak onto each skewer, followed by the peppers and onion. Continue creating a pattern until the skewers are filled.
- In a small bowl, whisk together the olive oil, minced garlic, parsley, thyme, rosemary, salt, black pepper, and onion powder.
- Generously brush the marinade over the steak and vegetables, turning the skewers to make sure all sides are coated.
- Preheat the grill to medium-high heat.
- Place the skewers on the grill and cook, turning every 2–4 minutes so the meat and vegetables cook evenly.
- For less-done steak, grill for approximately 8 minutes total. For well-done steak, grill for approximately 14–16 minutes total. Cooking time will vary depending on the thickness of the meat and the heat of your grill.
- Remove the skewers from the grill and allow them to rest for a few minutes before serving.
