Tangy Coleslaw with Veggie Sticks

This is not your typical coleslaw! Mayonnaise free and full of flavor and texture, this crunchy, tangy coleslaw with veggie sticks will become your new favorite salad!

This is the best, easiest and most flavorful “not your typical” salad to make. I’m not sure where I got it from, but I’m pretty sure it was originally from my mother-in-law. I love it because it comes together in seconds and I always get rave reviews! I often serve this tangy coleslaw with veggie sticks on Friday night if I am not in the mood for a lettuce salad, and it’s a really refreshing change. It’s also perfect as a light side for a summer barbecue.

For some reason, the Heaven & Earth Veggie Sticks are not always easy to find. You can usually get them from Amazon if they’re not at your local grocery. If you can’t find the sticks, you can use any vegetable chip (like Terra Chips) crushed up instead.

I didn’t include them in the salad, but you can also add slivered toasted almonds or any kind of chopped nuts to this salad for extra crunch. I don’t usually add them since my family doesn’t love nuts in salads, but I wish they did, since they really add a lot to the salad’s flavor and texture. You can also try other add-ins, like craisins, chopped scallions, finely dice peppers, or anything else that strikes you.

This dressing is so versatile that pretty much anything goes well with it! In fact I will double or triple it and put whatever is left in the fridge to use on other salads as well.

Ingredients

  • ½ bag coleslaw mix
  • ½ bag purple cabbage
  • 1 cup vegetable sticks*

Dressing

  • ¼ cup oil
  • 2 Tbsp sugar
  • 1 tsp soy sauce or coconut aminos
  • 2 Tbsp apple cider vinegar
  • Pinch salt

Instructions

  • Place coleslaw mix, cabbage, and veggie sticks in a bowl.
  • Place dressing ingredients in a container or bowl and shake or mix well. Drizzle over salad right before serving and mix.

Notes

*If you can’t find veggie sticks, you can also use crushed veggie chips (such as Terra chips).
Note: You can try this with craisins, chopped or slivered nuts, or any additional vegetables you’d like, such as finely diced red pepper or scallions.
