Chicken with Sweet Chili Sauce and Pastrami

This sweet chili pastrami chicken is an easy chicken dinner with amazing flavor!

One of my daughters loves sweet chili sauce; she puts it on everything. One of my sons loves pastrami. They were both thrilled when I made this sweet chili pastrami chicken, which is the perfect marriage between both those ingredients in one easy chicken dish! This is so easy to put together and the flavors are insane! 

A word on sweet chlli sauce: This is a delicious sweet sauce that’s become very popular recently. It has Asian flavors and a slight kick (it’s really not veryspicy!). If you don’t like any heat, you can use duck sauce instead. For Pesach, I don’t really like the kosher l’Pesach versions of this sauce. They’re just not the same. I think this comes out better using duck sauce with some added red pepper flakes rather than kosher-for-Pesach sweet chili sauce.

For saucy chickens like this sweet chili pastrami chicken, I like to prepare them in an oven-to-table dish. This simplifies serving, as you don’t have to worry about transferring it to a plate, and it’s even nice enough to bring to the table on Shabbos, giving you one less serving dish to wash!

Chicken with Sweet Chili Sauce and Pastrami

Ingredients

• 4 chicken bottoms, cut up
• Salt and pepper, to taste
• 10 oz. sweet chili sauce,* divided
• 6 oz. pastrami, diced

Instructions

• Preheat oven to 350°F.
• Place the chicken bottoms in an oven-to-table dish or 9×13 pan. Season with salt and pepper.
• Spread half the chili sauce over the chicken.
• Sprinkle the pastrami over the chicken. Top with remaining sauce (you may need to use your fingers or a spoon to spread it well over the pastrami pieces).
• Cover and bake for 1 hour. Uncover and bake for an additional hour.

Notes

*You can swap for duck sauce if you don’t want the extra kick. It’s better not to use kosher-for-Pesach sweet chili sauce for this; you can use duck sauce with some added red pepper flakes instead.
