Everything But the Campfire S’mores Bars
If you feel nostalgic over that summer campfire favorite (and even if you don’t!), you’ll love these s’mores bars that recreate that melty goodness — no fire required!

I love making bars of all kinds. They’re so much easier than shaping cookies and they’re also so versatile! You can do all kinds of things with a basic bar (for example, for another kiddie — and adult! — favorite baked into a bar, try these sweet and creamy cookies & cream bars!).
This bar was inspired by that campfire favorite: s’mores. But, confession time, I never really loved s’mores! I’m not sure why not, but they were never really my thing, as a kid or as an adult, until lately I started getting into them in my own way: I started making s’mores bars, a cross between s’mores and blondies. These are so good that I started making them every single week! The oozy, gooey marshmallows, the warm, melty chocolate and the crispy crunch of the graham crackers just scream “summer campfire!” and take me back to the summers of my youth.
I like to use mini marshmallows for these, but if I don’t have them I just take big ones and cut them up. It’s one more step, but not a big deal!

Everything But the Campfire S’mores Bars
Ingredients
- ¾ cup oil
- 1 cup brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 cups flour
- ½ tsp baking soda
- 1 cup mini marshmallows (or about 10 large marshmallows, cut into small pieces)
- ¾ cup chocolate chunks
- 5 whole graham crackers, broken up into coarse pieces
Instructions
- Preheat oven to 350°F and line a 9×13 pan with parchment paper.
- Place oil, brown sugar, vanilla, eggs, flour and baking soda in a bowl. Mix with a a wooden spoon or spatula until partially combined.
- Add graham cracker pieces, marshmallows and chocolate chunks and mix until just incorporated.
- Press mixture into prepared pan. Bake in preheated oven for 25-30 minutes.
