Simple Tomato Salad
This light and easy tomato salad packs a punch of flavor. Dress it up with add-ins or enjoy it as is!

I have been making this salad since I was a little girl. My father would go to the farmers market and come home with dozens of delicious fresh tomatoes — more than we could possibly eat. I would take them and chop them up and make this salad. Then I’d share it with our neighbors so none of the tomatoes went to waste!
Tomatoes can be tricky to cut, especially when they’re ripe and juicy. Use a serrated knife for best results, not a knife with a smooth blade.
This salad lasts a few days in the fridge. It’s great as a side for a summer barbecue or picnic. I especially like to serve it for shalosh seudos or a light lunch; I usually add some protein by sprinkling on some feta cheese or tuna so it’s more satisfying. For a fleishig version that’s full of flavor, you can add some grilled or fried pastrami. You can also add other vegetables, like cucumbers or peppers, for a more well-rounded salad, or just serve it as is and enjoy that sweet, juicy summer tomato goodness. The ideas are endless!

Simple Tomato Salad
Ingredients
- ½ pint red cherry or grape tomatoes, halved
- ½ pint yellow cherry or grape tomatoes, halved
- ¼ red onion, finely diced
- 2 tsp vinegar
- 1 tsp salt
- 2 tsp extra virgin olive oil
Instructions
- Place all ingredients in a bowl. Toss together to combine. Let sit for a little while before serving.
