Mini Salmon Knishes
A delicious and savory appetizer that is a must-have on Yom Tov.
This is my go to Yom Tov appetizer. I make it every single Yom Tov. I keep a binder of every Yom Tov menu I have ever made. Going back the last 10-15 years, this knish is on every single menu. I think that’s testimony enough to how good it is. I grew up with only having salmon on Yom Tov. That was my mother’s “kavod Yom Tov” and I’ve adopted that “minhag” as well.
There are so many ways you can make or serve this knish. I’ve done a log using a puff pastry sheet. I’ve made small “purses” by placing puff pastry squares in muffin tins and pinching up all the corners together. Sometimes I will serve it with mushroom sauce and other times with spicy mayo drizzled over it.
These freeze beautifully and can easily be made in advance. You can also make them using fresh salmon if you prefer.
