Crispy Roasted Baby Potatoes with Warm Feta Cheese

Ingredients

  • 2 lbs baby potatoes (approx.), quartered
  • 1 Tbsp oil
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp dried parsley
  • ¼ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½-¾ cup feta cheese crumbled
  • Fresh parsley, for garnish

Instructions

  • Preheat oven to 400°F. Place potatoes on a lined cookie sheet. Add oil and spices; toss well to coat.
  • Bake for about 40 minutes, until crispy on the outside and cooked through.
  • Place warm potatoes in a serving dish. Top with feta cheese. Garnish with parsley.

Notes

If not serving right away, reheat the potatoes covered until well heated. Transfer to serving dish and top with feta.
To take these potatoes up a notch, ater plating in an oven-proof dish, place in the oven uncovered for a few minutes to really melt the feta.
