I never would have imagined that I would put the words “easy” and “rolls” in the same sentence. Just the idea of using yeast seemed anything but simple to me — it conjured up images of complicated recipes, lengthy rising times, and finicky dough. However, as soon as I realized how surprisingly easy this recipe actually was, I changed my tune. It comes together incredibly quickly, doesn’t require a lot of pre-planning or fuss, is made entirely by hand, and can elevate a simple supper of scrambled eggs or deli meat to unbelievably delicious heights!

The aroma of these freshly baked easy dinner rolls wafting from the oven is simply irresistible. I also believe that baking the rolls on a real cookie sheet makes a difference; it creates a crisp, golden-brown crust that’s just perfect.

Ingredients

  • cups warm water
  • ¼ cup sugar
  • 2 Tbsp yeast
  • cup oil
  • 1 egg
  • cups flour
  • 1 tsp salt

Toppings:

  • 1 egg, beaten
  • Optional: everything bagel spice, sesame seeds, poppy seeds, coarse sea salt, etc.

Instructions

  • In a large bowl, combine water, sugar and yeast; allow to sit for a minute or two. Add oil and egg and mix. Add flour and salt and mix with a wooden spoon until it is too difficult. Then knead with your hands until all ingredients are incorporated and it forms a smooth dough.
  • Cover and let rise for about 30 minutes.
  • Preheat oven to 350°F and place a piece of parchment paper in a 9×13 pan.
  • Shape dough into small balls (the dough will be sticky — this means the rolls will be light and fluffy). Brush with egg wash and sprinkle with desired toppings.
  • Bake for about 20 minutes, or until tops of rolls are golden brown.

Notes

If you shape the rolls as described, the finished product will be small, pull-apart style dinner rolls. If you’d like to make larger individual rolls, bake these on a cookie sheet spread farther apart.
Yield: 12-16 pull-apart rolls or 8-10 large individual rolls
