Rich Fudgy Brownie Cookies
These fudgy brownie cookies are so rich and chewy — the perfect answer to your chocolate fudge cravings!

When it comes to baking, you know me: One bowl, dump, bake, done!
But for these fudgy brownie cookies, I went a little out of my comfort zone and the results were well worth it! I ended up with a delicious fudgy cookie with the creamy consistency of a brownie but also the fun of a perfectly portioned cookie.
Though I usually like mixing by hand, I spent many long hours last year debating getting a cordless mixer. In the end, I decided to gift myself with one for Chanukah. It was pricey but worth every penny. I am all for using a whisk or wooden spoon to mix my batters, but sometimes it’s simply easier to use a real mixer and this way I don’t have to shlep out something big and heavy. It’s so light and easy to use! For this recipe, the electric mixer is not strictly necessary — I actually used a whisk, not the mixer, when I tested it — but using it would make it easier and quicker.
The batter for this is very moist and sticky, not like a regular cookie dough, which is how they end up as such fudgy cookies. Don’t try to roll the cookies with your hands. Either use a cookie scoop or two spoons to transfer the batter to the cookie sheets. The cookies spread a lot, so make sure you leave space between them on the cookie sheet.

Fudgy Brownie Cookies
Ingredients
- ¼ cup oil
- 8 oz (1⅓ cups) chocolate chips
- ½ cup white sugar
- ¼ cup brown sugar
- 2 eggs
- 1 tsp vanilla
- ½ cup flour
- ¼ cup cocoa powder
- 1 tsp baking powder
Instructions
- Preheat oven to 350°F. Place oil and chocolate chips in a pan. Cover and place in the oven for 10 minutes. Uncover and mix until chocolate is smooth. Set aside to cool slightly.
- In a bowl, using a whisk or mixer, combine sugars, eggs, and vanilla until light and frothy.
- In a small bowl, combine flour, cocoa powder and baking powder.
- Fold the chocolate mixture into the wet mixture to combine. Gently fold in the flour mixtur and stir until combined. (Batter will be very moist.)
- Using a cookie scoop or two spoons, spoon batter onto a baking sheet lined with parchment paper, leaving room between cookies for spreading. Bake for 10 minutes.
- Let cookies cool completely before removing from the cookie sheet.
