Pizza Shop Inspired Garlic Knot Potatoes
A delicious and easy savory side dish perfect for Yom Tov or your family bbq!
I made these potatoes for yomtov. My family loved them! The soft bite of the potatoes paired with the crispy garlicky outer coating is perfection!
One of my children love garlic knots. Every time we go to a pizza shop he orders them. I rarely eat them, I don’t care for them and I’d rather save my calories for something that I love like french fries! The flavor combination in them is pretty incredible. I was with him recently watching him happily munch on his garlic knots and the little soft doughy balls of goodness reminded me of baby potatoes and thought to myself I wonder how they would taste if instead of dough I tossed the garlic mixture with potatoes! Given all the ingredients I knew it would come out so good! I wasn’t wrong! It was a real hit!! I used baby potatoes but you can use regular cooking potatoes cut into chunks.
Pizza Shop Inspired Garlic Knot Potatoes
Ingredients
- 1 bag (approx 2lb) baby potatoes, halved
- 8 – 10 cloves garlic, crushed
- 1 tbsp dried parsley
- 2 tsp salt
- 1 tsp black pepper
- 1/4 cup oil
Instructions
- Preheat oven to 400°
- Toss everything together very well. (I like to mix everything directly on the cookie sheet, one less thing to wash)
- Place on lined cookie sheet
- Bake approx 40 min to 1 hour or until nice and crispy.
