Oven-Roasted Green Beans with Fresh Garlic
Simple, fresh ingredients really bring out the flavors in these basic roasted green beans, so they aren’t so basic after all!
I have been posting recipes for over six years and I am still surprised when people ask me for the most basic of recipes. If I tell them to just do a little bit of this, a little bit of that…they want to know how many grains of salt are supposed to go in the dish!
This is one of those recipes. It is unequivocally the easiest recipe ever and I make it just about every single Shabbos. I even brought them with me once when we went away for Shabbos, since my kids practically revolt if I ever don’t make them!
I like French green beans (also called haricots verts) a lot better than standard ones, as they are longer and thinner, giving them an extra delicious crunch. French green beans can be hard to find, so when I do come across them, I get very excited.
This recipe can be made with either type of green bean, but whichever way you go, it’s best to use fresh. Frozen beans won’t come out nearly as good because they’ll be missing that delicious roasted crunch.
For this recipe, I use fresh garlic. Sometimes I leave the cloves whole and sometimes I slice them, whatever I’m in the mood for. There have been times when I was out of fresh garlic and used garlic powder instead. They certainly did not come out as delicious as with fresh garlic, but in a pinch it’ll do.
The recipe is best made within 24 hours of serving. I always make it Thursday night or Friday morning and serve it at room temperature rather than warming it up.
There’s a big argument in my family. My boys like their green beans charred, basically burnt more black than green. My girls (and I) like them nicely roasted. So I do both! I take out half the batch after 40 minutes and then continue baking the rest until they are practically little black crisps for my boys! One thing I will tell you, when it comes to getting those crispy bits, using a real cookie sheet makes all the difference.

Oven-Roasted Green Beans with Fresh Garlic
Ingredients
- 1½ lbs. green beans
- 2 tbsp oil
- 1 tsp black pepper
- 2 tsp coarse sea salt
- 4-6 cloves garlic, peeled*
Instructions
- Preheat oven to 400℉.
- Wash and trim green beans; pat dry.
- Spread green beans on a cookie sheet. Drizzle with oil and sprinkle with salt and pepper.
- Scatter garlic cloves among the green beans.
- Bake for 40 minutes to an hour, depending upon how crispy you want them.
- Serve warm or at room temp.
