Oreo-Brownie Bundt Cake: A Classic Bundt with an Upgrade

In this Oreo-Brownie Bundt Cake, a classic Bundt gets a sweet upgrade with the addition of brownie batter and crushed cookies, adding texture and flavor to this mouthwatering treat.

Oreo Marble Bundt Cake

I am a cake-lover at heart, and for me, nothing beats a classic Bundt cake. There’s something special about having one on the counter, ready to serve to unexpected guests (or to enjoy a slice by yourself with a late-afternoon coffee — no judgment here!). I swear by my trusty Nordic Ware Bundt pan, which I’ve had for years. You can definitely buy a cheaper Bundt pan, but it really pays to go for quality when it comes to this type of pan, as the cakes come out so much better and they don’t stick to the pan when you try to unmold them! Another secret to a perfectly unmolded Bundt cake is lots of oil spray and allowing the cake to cool completely before trying to invert it onto a plate.

Oreo Marble Bundt Cake

After pouring the brownie batter on top of the vanilla batter, you can either marbleize it with a knife or spatula, creating a mixed-up marble cake, or leave it at the top (which means it will be at the bottom once the cake is unmolded), so that the cake is in distinct layers, as pictured. Either way it will be delicious!

Oreo-Brownie Bundt Cake

Ingredients

Cake:

  • 2 eggs
  • 1 cup oil
  • cups sugar
  • 1 cup milk (I use almond milk to keep it dairy free)
  • 1 tsp vanilla extract
  • 1 Tbsp baking powder
  • 3 cups flour
  • 10-15 Oreos (or any chocolate sandwich cookies), broken into pieces

Brownie Layer:

  • ¾ cup chocolate chips
  • 2 tsp oil

Icing:

  • cups confectioners' sugar
  • 1 tsp vanilla
  • 1 Tbsp hot water
  • 1 tsp oil
  • 5 Oreos (or any chocolate sandwich cookie), crushed

Instructions

For the Cake:

  • Preheat oven to 350°F and grease a Bundt pan very well with cooking spray.
  • In a bowl, using a whisk or wooden spoon, combine eggs, oil, sugar, milk, and vanilla. Add baking powder and flour and mix until incorporated.
  • Remove 1¾ cups of the batter and place in a separate bowl. Pour remaining batter into prepared pan and set aside.
  • In a small pot over a low flame, melt chocolate chips with oil, stirring constantly. (You can also do this in the microwave in 30-second increments.)
  • Add melted chocolate to the bowl of reserved batter and mix.
  • Place broken Oreo pieces directly into the batter in the pan.
  • Pour the brownie batter on top. You can either leave it in layers or swirl the batters together with a knife or spatula to create a marbleized effect.
  • Bake for 50-60 minutes, until an inserted toothpick comes out clean. Cool cake completely before inverting onto a cake plate.

For the Icing:

  • Mix together confectioners' sugar, vanilla, hot water and oil using a whisk.
  • Drizzle icing over the cake. Top with the crushed Oreos.
