Meat Bolognese
When I was younger, I had a friend whose mother was an incredible cook. She knew my love for food and would often save me some supper when she knew I was coming over to study or hang out, so I could taste her delicacies. One night, she served me this meat sauce. It was so good, the flavors so vibrant, I went nuts over it. I was even more surprised when she shared her recipe with me and I realized how easy it was.
I make this supper very often—I will even double it, as it freezes beautifully. Because the meat has so much incredible flavor, I will often serve it over brown rice or whole-wheat pasta. My kids don’t really notice the difference and if I can slip in some extra whole grains, why not? To change things up, I’ll sometimes serve it with nacho chips for some fun, with guacamole and diced vegetables.
If you want to “fancy” it up a bit, you can add diced pastrami or beef fry, or even throw in some leftover meat from Shabbos. My boys love when I add diced sausage!
The best way to break up meat when browning it is to use a potato masher — no need for fancy utensils! I probably use my potato masher more for breaking up meat than for actually mashing potatoes!
