Jalapeño-Stuffed Burgers

Fire up your grill! These incredible jalapeno-stuffed burgers really take regular burgers up a few notches!

I’m usually all about simplicity when it comes to grilling. I don’t usually try doing anything too fancy or complex, because I find that people just like plain old good grilled meats and poultry. With these jalapeno-stuffed burgers I made an exception. They take a bit more work but they are well worth the effort! If you want to save prep time on the day of, you can make the filling and stuff them into the meat patties the night before and then refrigerate. Take them out of the fridge and grill them the next day. 

Don’t be scared off by the jalapenos. Roasting them takes away some of the heat and just leaves behind a delicious mellow sweet and slightly spicy flavor. If you are still nervous about them being too spicy, you can use regular sweet peppers instead.

Note that because these are essentially double burgers, they come out very large. I cut them in half for my younger kids. The recipe itself makes a lot of burgers, which is perfect for a crowd. If you aren’t serving so many people, you can easily halve the recipe or cut it however you want to make your desired amount. 

I like to keep my burgers plain and simple. If you put in too many ingredients, they tend to fall apart. I just add salt and pepper and that’s it. When you’re shaping them, don’t overmix or they can become tough. 

Make sure the grill is fully heated before you put the burgers on. You want to hear that gorgeous sizzle as they hit the grill!

I grill my burgers approximately 4-5 minutes per side, depending on my crowd. Some of the people I grill for like them rare, though I tend to cook them on the medium-rare side. I don’t need my meat “mooing,” as we like to say. If you like your burgers well done, which I find from experience is the way most people like them, then grill them 6-7 minutes per side. Whenever you flip them, use a good pair of tongs to do it.

I know it’s hard to time everything perfectly, but burgers are really best served right off the grill, so if I am grilling multiple proteins, I will save the burgers for last. As soon as they are ready, I cover the burger platter with foil to lock the moisture in.

Jalapeno-Stuffed Burgers

Ingredients

  • 10-15 jalapeños, sliced into 1/4” rings
  • 1 medium onion, diced
  • 2 Tbsp oil
  • 4 lbs ground beef
  • Salt and pepper, to taste.

Instructions

  • Preheat oven to 400°F. Toss together jalapenos, onion and oil on a baking sheet. Roast for 30 minutes. Allow to cool.
  • Add salt and pepper to meat and mix. Divide meat into approximately 30 thin, flat patties. Place a spoonful of the jalapeño mixture on one patty. Take a second patty and put it on top. Press both patties together, making sure the edges are well sealed. Repeat with remaining patties.
  • Grill on high for 6-10 minutes per side, depending on desired doneness.

Notes

This recipe makes a lot of burgers. Feel free to cut in halve or even quarter if you’re not feeding a crowd.
You can make the filling and prep the burgers the night before to cut down on prep time the day that you are grilling these.
