Hot Cocoa Cookie Sticks

There is something so comforting about sipping hot cocoa from a mug with mini marshmallows floating on top as they slowly melt. I have these incredible memories of buying hot cocoa from a diner in Brooklyn when I used to visit my grandmother there. A huge cup cost 50 cents and I remember walking down 13th Avenue in Boro Park in the winter months sipping the sweet, scalding cocoa. In reality, it was probably made from some commercial powder, but to me it was so, so good. 

I love being able to take those memories and put them into a delicious dessert. I have many versions of biscotti and cookie sticks on my Instagram page. These hot cocoa chocolate cookie sticks are a favorite, as they’re slightly different than your typical biscotti. I love the dark, rich brown color and the bright white chocolate chip contrast. They are so easy to make and can easily be made in advance and frozen.  

If you know me, you know that as much as I love making cookies, I don’t love shaping them, which is why biscotti and cookie sticks have become my go-tos. You get delicious baked goods but save so much time, and I love the look of the long sticks. 

As usual, no electric mixer is needed for these. I simply use a wooden spoon to mix the batter and then if it gets too hard, I switch to using my hands. 

When making biscotti or cookie sticks, it is imperative to slice them while warm. Once they cool, they harden, and then they will crack if you slice them. 

When baking I always use a REAL cookie sheet. It makes a huge difference in the texture and baking of the biscotti. I pretty much only use real baking sheets now.

Hot Cocoa Cookie Sticks

Ingredients

  • 2 cups flour
  • 3/4 cup cocoa powder
  • 3/4 tsp baking soda
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup oil
  • 1 cup white chocolate chips
  • 1 cup mini marshmallows optional

Instructions

  • Preheat oven to 350℉.
  • Combine flour, cocoa, baking soda and sugar in a large mixing bowl.
  • Add in eggs, vanilla and oil; mix.
  • Once batter is almost fully combined, add chocolate chips (and mini marshmallows, if using).
  • Mix until fully incorporated.
  • Divide batter into two and shape into long logs
  • Place each log on a lined baking sheet.
  • Bake for 30 minutes.
  • Slice while still warm.
