Easy Herb Marinated London Broil

This easy herb marinated London broil recipe is bursting with the flavors of garlic, olive oil, and dried herbs. Perfect for any occasion!

marinated London broil

One of the very first cuts of meat I learned to work with when teaching myself how to grill was London broil. My mother-in-law made it often and generously spent hours teaching me the ins and outs of grilling, along with all the little tricks that make a good piece of meat turn out great. Because of that, London broil feels a little nostalgic to me — simple, dependable, and always delicious.

What I love most about this recipe is how versatile it is. While the marinade was developed for London broil, it also works beautifully on rib steak, bone-in chicken, chicken cutlets, or other cuts of beef, making it one of those recipes you’ll memorize after making it once or twice.

I first made this herb marinated London broil Pesach time, and I lost count how many times I made it over Pesach. The ingredient list is simple, no fuss, and full of classic flavors that pair with just about everything. Whether you’re serving this as a Yom Tov main dish, a family dinner, or stocking your freezer with easy protein options, this recipe is one you’ll come back to again and again.

Ingredients

  • 2 lbs London broil

Herb Marinade:

  • ½ cup olive oil
  • 4 garlic cloves, minced
  • 1 tsp dried parsley
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • 1½ tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika

Instructions

Prepare the marinade:

  • In a bowl or jar, combine all herb marinade ingredients. Mix or shake well to combine.

Prepare the meat:

  • Using a sharp knife, score both sides of the London broil in a crisscross pattern. This helps the marinade penetrate the meat and creates extra flavor in every bite.
  • Generously rub the herb marinade over both sides of the meat, making sure it gets into the scored cuts. Cover and refrigerate at least 30 minutes, or overnight for deeper flavor.

Grill Option:

  • Preheat grill to medium-high. Place London broil on the grill and grill for 5-6 minutes on the first side.
  • Flip and grill an additional 4 minutes on the second side. For more well done meat, grill an additional 2-3 minutes per side.

Broil Option:

  • Preheat oven to high broil. Place the London broil in a broiler-safe pan, making sure excess oil is not pooling in the pan. (Too much oil may smoke heavily or catch fire under the broiler.)
  • Broil approximately 6 minutes per side for medium-rare, adjusting slightly depending on thickness and desired doneness.

Slice and Serve:

  • Remove from the grill or oven, cover loosely with foil, and let rest for 10 minutes before slicing.
  • Slice thinly against the grain for the most tender texture. Serve warm.
