Ground Beef Scalloped Potatoes
Scalloped potatoes are good…but add some ground beef and you have one delicious (and easy!) meal! These ground beef scalloped potatoes can’t be beat for a weeknight supper or a Chol Hamoed dish.

These days, all anyone wants are good suppers—the easier, the better! My back-to-school resolution is to share lots of solid, easy meals with you.
There are only so many times I can serve chicken and rice or chicken and potatoes—though, since those two suppers are guaranteed to be devoured by my entire family, sometimes it’s easier to stick with them. In any case, for those nights when we’re all open to change, but we still want something simple, hearty and comforting, these ground beef scalloped potatoes really fit the bill.
One dish my family loves is scalloped potatoes. It’s an absolute must for every Yom Tov. Over the years, I’ve played around with the concept—scalloped potato chicken, dairy scalloped potatoes, even a version with pastrami mixed into the onion sauce. You get the point—we really like our scalloped potatoes!
When I tried out this dish for my family, they loved it. And the fact that I can prepare it in the morning (or even the night before) and bake it right before serving made it a real win!
If I’m serving it the same day (and not freezing), I like to make it in a Dutch oven casserole. It’s so convenient, and I love the look of bringing a beautiful Dutch oven straight to the table.
Freezing potatoes is usually not a great idea, but if you want to get a head start on this, you can make the beef part in advance, freeze it, and just prep the potatoes fresh before baking.
Besides a great after-school supper, this dish is also perfect for a Chol Hamoed meal! Since it can be made in advance, you can come home from a long day of tripping and just pop it into the oven, for a filling meat dinner.
Want to take it up another notch? Add some diced sausages. Recently, I had a few left over from a barbecue. I tossed them into my meat sauce on a whim—and wow! Was it amazing!

Ground Beef Scalloped Potatoes
Ingredients
- 6 medium potatoes
- 1 medium onion, finely diced
- 2 Tbsp oil
- 2 lbs. (approx.) ground beef
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp paprika
- 3 Tbsp tomato paste
- 1 Tbsp beef consommé powder*
- 1 cup water
Instructions
- Preheat oven to 350°F.
- Peel and slice the potatoes into ¼-inch rounds. Place them in a bowl of cold water and set aside while you prepare the rest of the dish.
- In a Dutch oven or casserole dish, heat the oil over a medium flame. Add the onions and sauté until soft and golden brown, 10-15 minutes.
- Add the ground beef, breaking it up with a spoon, and cook until browned, 5-7 minutes.
- Stir in the salt, pepper, garlic powder, onion powder, and paprika. Cook for 1–2 minutes, until fragrant.
- Add the tomato paste, beef consommé, and water. Mix well.
- Drain the sliced potatoes and add them to the pot. Stir to combine, cover, and transfer to the oven.
- Bake for 1 hour, until potatoes are tender.
