Fresh and Crunchy Green Goddess Salad

Filled with fresh green goodness and loaded with crunchy chopped veggies, this green goddess salad is the perfect complement to any meal!

This crunchy salad took the internet by storm! At first, when I kept seeing it, all I could think of was Oscar the Grouch! But I kept thinking of that crunch and flavor from all the delicious components and decided to give it a try. 

I’m so happy I did — this salad is delicious! It’s also the perfect salad for a crowd — think BBQ or big Yom Tov meal. At almost every BBQ I make my crunchy taco salad, but when I want a second salad or something different, this is perfect, as it’s not your same old lettuce salad. 

When it comes to salads, to me the bowl is everything. There’s something about eating salad in a nice bowl that makes all the difference, I bought myself some nice small salad bowls for when I make a salad for my lunch. A wooden bowl like this one, in big or small, looks so pretty with salad, particularly this green goddess salad. The green goes so well with the brown, and it looks so fresh and natural. (Fun Fact: a wooden salad bowl was the very first prop I bought when I started shooting food back in 2017!)

Back to the salad — while green goddess salad is by definition lots of green veggies finely diced, like I always say, salads do not involve science like baking. You can really do what works for you. If you don’t like raw celery, you can easily skip, or if there’s a different vegetable you want to add (even if it’s not green!), you totally can.

What I love about this salad is that it can be used for more than one meal — although I doubt there will be any left! Because the lettuce is diced small and so many of the components are so crunchy, it doesn’t get wilted right away. But note that when putting it together, I still mix the dressing in right before serving it — that extra-fresh crunch is always the best!

Fresh and Crunchy Green Goddess Salad

Ingredients

Dressing:

  • Handful fresh parsley (or 1 Tbsp dried parsley or 2 frozen parsley cubes)
  • 2 cloves garlic (or 2 frozen garlic cubes)
  • 2 Tbsp lemon juice
  • 1 Tbsp water
  • ¾ cup mayonnaise
  • 1 tsp salt
  • 1 scallion

Salad:

  • Lettuce, shredded small
  • 2 stalks celery, peeled and diced
  • 4 Persian cucumbers, diced
  • 2 scallions, cleaned and diced
  • 1 green pepper, sliced very thinly
  • Green cabbage, shredded

Instructions

  • Place dressing ingredients in a blender and blend well until smooth. (You can also place in a bowl or container and blend with an immersion blender.)
  • Place all salad components in a bowl. Drizzle with dressing. Toss and serve.

Notes

Dressing can be made a few days in advance and stored in the fridge.
