Flaky Leek Pinwheels
These leek pinwheels add a fun, festive twist to a classic Rosh Hashanah food. They’re sweet, savory, and perfect for starting the new year on a delicious note.

I wasn’t joking when I said I started making every dish possible using leeks so I don’t have to eat them raw on Rosh Hashanah anymore (which is how I grew up eating them!). I’ve made leek dip, leek fritters and now these amazing leek pinwheels. Turns out, I think I do like leeks after all!
These pinwheels are delicious served fresh or reheated uncovered. Note that they bake at 350 degrees for 45 minutes, which sounds a little low and a little long for puff pastry. However, I’ve recently adjusted the baking temp and times for my puff pastry recipes, since I found that the outside often burned while the inside remained raw. Cooking it lower and slower causes the puff pastry to bake more evenly, so it’s crispy, flaky and golden throughout — without being burned or raw!
I use a heavy-duty steainless-steel frying pan like this one for sauteing. It’s a little pricey but so worthwhile, since you get such a good saute with this type of pan and there’s no non-stick coating to peel off.

Leek Pinwheels
Ingredients
- 3 Tbsp oil
- 4 leeks, white and light green parts only, diced.
- 1 large onion, diced
- 4 garlic cloves, chopped
- ¼ cup white wine
- Salt and pepper, to taste
- 2 Tbsp silan or honey
- 2 puff pastry sheets
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Heat the oil in a large frying pan over medium-low flame. Add leeks, onion and garlic and sauté for 25-30 minutes, until golden and caramelized.
- Toward the end of the sauteing, add wine, salt, pepper, and silan or honey.
- Roll out a puff pastry sheet so it’s a large rectangle. Spread half the leek mixture on the dough. Roll up very tightly, jelly-roll style. Slice into 1-inch slices and place on prepared baking sheet, swirl-side up.
- Bake for about 45 minutes, or until golden and puffed.
