This creamy sun-dried tomato pasta is packed with flavor and comes together with simple ingredients in under 30 minutes. The sauce is rich, cheesy, and loaded with sautéed garlic and sun-dried tomatoes. It’s an easy dairy dinner that feels a little special but is still completely family-friendly.
The flavor of this pasta really says it all! The combination of butter, garlic, cream cheese, Parmesan, and sun-dried tomatoes creates the most delicious creamy sauce. Serve it right away for the best texture, or keep the sauce separate if you’re preparing it in advance.
Funny story; I actually dont like sun-dried tomatoes. At all. I find them too salty and briny if that even makes sense! But my husband loves them, so I make dishes with sun-dried tomatoes for him! Easy Sun-Dried Tomato Pasta with Cream Cheese
Ingredients
- 1 package spaghetti approximately 16 ounces
- ¼ cup butter
- ½ cup sun-dried tomatoes roughly chopped
- 2 garlic cloves roughly chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 8 ounces cream cheese
- 1 cup reserved pasta water plus more as needed
- ½ cup milk
- ½ cup grated Parmesan cheese
Instructions
- Cook the spaghetti according to the package directions. Before draining, reserve at least 2 cups of the pasta water.
- While the pasta cooks, melt the butter in a large pot over medium heat.
- Add the chopped garlic and sun-dried tomatoes. Sauté for 2–3 minutes, until fragrant. Feel free to add extra sun-dried tomatoes if your family loves them.
- Season with the salt and black pepper.
- Add the cream cheese. It may look clumpy or separated before it fully melts—this is completely normal. Continue stirring until it begins to melt into the sauce.
- Add the milk and 1 cup of the reserved pasta water. Stir well and bring the mixture to a gentle simmer.
- Allow the sauce to cook for a few minutes, stirring frequently, until it begins to thicken.
- Add the Parmesan cheese and stir until the sauce is smooth and creamy.
- Add the cooked spaghetti and toss until evenly coated. Add a little more reserved pasta water as needed to loosen the sauce.
- Serve warm
