30-Minute Easy Mongolian Ground Beef Noodles
These easy Mongolian ground beef noodles are packed with savory flavor and come together with minimal effort. It’s lighter than takeout, family friendly, and the kind of easy supper you’ll make on repeat.

When I think of Asian-inspired dishes, I usually hesitate to make them for a few reasons—they often feel complicated, with too many steps and layers, and they can be overly heavy with bold flavors that leave you feeling overstuffed and uncomfortable afterward. Because of that, I tend to shy away from both making them at home and even ordering them out.
That’s exactly why I was so surprised by these Mongolian ground beef noodles. Not only was the dish incredibly easy to make, but it was also much lighter than I expected while still being packed with flavor. It had all those delicious sweet and savory Asian-inspired flavors without feeling too rich or overwhelming. Best of all, the whole family loved it—which is always the biggest win.
Actually, there were so many wins with this recipe: it came together quickly, made enough for leftovers, and I even had extra to share with a friend. Safe to say this one is absolutely going into our regular supper rotation.

Over the years, I’ve taken classic Asian-inspired dishes and made them my own. These dishes, like my light and flavorful chicken lo mein and oven-baked sesame chicken, are the kind of meals we love most at home—simple, satisfying, and not too heavy. This recipe fits right into that category.
Another reason I love this dish is how make-ahead friendly it is. I prepared it the night before and it reheated beautifully. You can even make the beef mixture ahead of time and freeze it. Then, when you’re ready to serve, all you need to do is quickly boil a pot of pasta and toss everything together.
If you enjoy a little heat, feel free to add some red pepper flakes and a squirt of sriracha sauce to the meat mixture for an extra kick.
And, honestly, I’m still not entirely sure why it’s called “Mongolian”—it has those classic Asian flavors but is really more of an American-Chinese dish. But if it tastes this good, I’m definitely not complaining.

30-Minute Easy Mongolian Ground Beef Noodles
Ingredients
- 1 lb spagetti or linguini, cooked and drained according to package directions
- 1 Tbsp toasted sesame oil
- 1 lb ground beef
- 2 cloves garlic, minced (or 2 frozen cubes)
- 1 frozen ginger cube
- 2 Tbsp corn starch
- 1 Tbsp beef consommé powder*
- ⅓ cup soy sauce
- ½ cup water
- ½ tsp red pepper flakes (optional, if you want spice)
- Chopped scallions, for garnish (optional)
Instructions
- In a large frying pan over a medium flame, heat the oil. Add the ground beef and let it brown, mixing constantly to break up chunks, about 5-7 minutes.
- Add the garlic, ginger, corn starch and beef consommé to the ground beef and saute for 1-2 minutes allowing the flavors to blend.
- Add the water and soy sauce (and red pepper flakes, is using). Stir and simmer for 1-2 minutes, until mixture thickens.
- Toss the beef mixture with the noodles. Top with scallions if desired. Serve warm.**
