Easier than you think, Traditional Sweet Cheese Blintzes
A delicious delicate crepe, rolled with a soft sweet cheese filled center. No Shavuos is complete without these traditional Hungarian blintzes.
Cheese Blintzes, a delicious delicate crepe rolled with a soft, sweet cheese filled center. This delicacy I save for making once a year on Shavuos, not because I don’t like them but because I find making dozens of crepes very cumbersome. In truth every year when I do make blintzes I always ask myself why I don’t make them more often. I think I make it harder in my mind than it actually is!
Over the years I’ve tried different gadgets hoping to speed up the process, I tried a griddle, I tried a crepe maker. The best thing that worked for me was a simple crepe pan they are not expensive and don’t take up alot of room when storing them. I used to think, ehh how different can this be than a standard 10” frying pan? However the shallow sides and full flat bottom really do make a difference. A standard frying pan is slightly tilted towards the middle, the high sides make it harder to flip. You can certainly make crepes in a frying pan but using an actual crepe pan does the process a lot easier.
Blintzes whetherr fully prepared or the crepes themselves freeze beautifully. I like to make them in advance, as it’s time consuming and one thing I can cross off my list. If making just the crepes, and freezing them, make sure they are fully defrosted before handling them, if they are slightly frozen, they can still be hard and crack.
The filling comes together very easy and quick. There are many savory blintz recipes out there. My husband loves a good potato blintz, but for Shavuos I like to make sweet cheese blintzes.
Blintz toppings are optional. Recently crepes have become a trend, you can order crepes with every topping possible, nutella, chocolate, lotus etc but I like to keep it traditional with a blueberry or strawberry sauce. It’s always best to make your own homemade sauce but in reality I buy a good quality Jam and use that. I love the Bonne Maman Jams.
The cheese filling is very easy to prepare, it comes together in seconds. You can prepare it a few hours in advance or even the night before. Keep it well covered and refrigerated until ready to use.
You can freeze the crepes alone. Or the Blintzes stuffed and fully rolled.
To serve; heat lightly covered in an oven until heated through. Alternatively you can lightly pan fry them to heat through.
I love to serve my summery-spinach-and-strawberry-salad along side these blintzes at my Shavuos meal.
Easier than you think, Traditional Sweet Cheese Blintzes
Ingredients
Crepes
- 8 eggs
- 1 cup milk
- 3/4 cup water
- 2 cups flour
- 1/2 cup sugar
- 1 Tbsp vanilla sugar
- 1 Tbsp oil
Sweet Cheese Filling
- 1 ½ lb farmer cheese
- 8 oz whipped cream cheese
- ½ cup sugar
- 1 egg
- 1 tsp vanilla extract
Instructions
- Place the crepe ingredients in a bowl using an immersion blender, or food processor blend until smooth and there are no lumps
- Heat a frying pan or crepe pan spraying it with the cooking spray, pour approx ⅓ cup of the batter into the pan swirling the pan to spread the batter. Cook for approx 1 min until the sides start to lift. Flip and cook for an additional 10 seconds.
- Repeat until all the crepes are done
- For the cheese filling; In a separate bowl add the cheese filling ingredients mix everything by hand.
To Assemble:
- Place a small amount (approx 2 Tbsp) of cheese filling in the center of the crepe. Fold over the sides and roll up. Repeat until all are done
- To serve rewarm slightly covered in the oven.
