Double Chocolate Pecan Cookies
A deliciously decadent chocolate cookie bursting with flavor!
I’m not into serving real desserts, like pies or mousses, on Friday nights, even when I have guests. Instead, I like to put out a variety of baked goods. I feel like after a long meal, people like the opportunity to chill and nosh a little.
I like to do all my baking at the beginning of the week, for a few reasons: My boys like to have a little treat when they come home from yeshivah after a long day, I love the look of a full cookie jar on my counter, and this way, when I am busy cooking for Shabbos on Thursday and Friday, I don’t have to worry about the baked goods. As a bonus, since it’s early in the week and I don’t feel pressured, I can include my girls in the process. My little one loves pulling up a stool next to me and getting involved!
These cookies are incredibly easy to make. It’s a “dump in the bowl and mix” kind of recipe. When I was working on it I was hesitant, as some of my kids are quite vocal about their dislike for nuts in cookies. But my husband and I love them, and I told myself that every so often it’s okay if I make something that’s more “adultish.”
Wanna skip the nuts? You can use white chocolate chips or even more dark chocolate chips or chunks instead for a triple chocolate ookie! You can also swap the pecans with any other nut of your choice, if you’d like. And as always when baking, I use real cookie sheets — they do make a big difference in how the cookies come out.
Double Chocolate Pecan Cookies
Ingredients
- 1 cup oil
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 tsp baking soda
- 1/2 cup cocoa
- 2 cups flour
- Handful of chocolate chips or chunks
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350°F.
- Place all ingredients in a bowl and mix until incorporated.
- Shape dough into balls and place on a lined cookie sheet.
- Bake for 10 minutes.
Notes
Freezes amazing — and they’re delicious straight out of the freezer!
You can swap the pecans for any nut of your choice, or for dark or white chocolate chips/chunks.
