Sweet and Creamy Cookies & Cream Bars

No chocolate chips? No problem! Made with a dump, mix, press and bake recipe, these cookies & cream bars really take the cake!

I have a little secret to tell you… I like to call bars “lazy-man’s cookies,” because that’s really what they are. Most of my bar recipes started out as cookies, but I had no patience to shape them, so I just pressed the dough into a 9×13 pan. All parties involved were super happy. None of my guests or family complained that they lacked the perfect little cookie shape, and I saved a lot of time!

The way these cookies came about was a total accident. Years ago, I was staying at my in-laws’ house and baking chocolate chip cookies. I made the big mistake of not laying out all the ingredients first to make sure I had everything, especially in a kitchen I was not entirely familiar with! I had everything in the bowl, but when I went to the cabinet to grab some chocolate chips, uh-oh, there were no chocolate chips to be found! In a panic, I started opening and closing all my mother-in-law’s cabinets, hoping to find something. I spotted a package of Oreos and thought, Hmmm this could work! I mean, there are lots of “cookies and cream” recipes out there… So I grabbed a bunch of Oreos, broke them into little pieces and used them in place of the chocolate chips. As you can imagine, they were SOOOOO good. The creaminess of the sandwich cookie filling added so much. So while I still bake my classic chocolate chip cookies very often, there’s something delightful about these cookies & cream bars as well that keeps me coming back to them over and over!

Now that the secret’s out, you can really add any cookie you’d like to these bars. Sometimes after Purim, when I have random cookies leftover from mishloach manos, or if I’m cleaning out my nosh cabinet and I have some mostly empty packages of cookies, I’ll use them in place of chocolate chips. I even used cereal once! 

Like most of my baking recipes, these cookies & cream bars are super easy — just dump everything in a mixing bowl and mix, press into a pan and voila! It’s a great recipe if you want to bake with kids. Little ones especially love breaking up the cookies (and of course sneaking a few along the way!). 

These freeze beautifully, so you can easily make them in advance.

Sweet and Creamy Cookies & Cream Bars

Ingredients

  • ¾ cup oil
  • ½ cup brown sugar
  • ½ cup white sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • ½ tsp baking soda
  • About 10 Oreo-style sandwich cookies, broken into pieces

Instructions

  • Preheat oven to 350°F.
  • Place everything in a bowl and mix. (Don’t be nervous if it seems a bit dry — keep mixing!)
  • Press into a 9×13 pan.
  • Bake in preheated oven for 20 minutes.
  • Slice into squares or bars while warm.

    1. hmmm sounds like something went wrong if the top was too crumbly and the bottom too moist? maybe it wasn’t mixed properly?
