Decadent Cookie Dough Cheesecake Squares
Cookie dough crust… Cheesecake filling… Dairy chocolate… these cookie dough cheesecake squares are a match made in heaven!

While I love dairy baked goods, I’m not such a cheesecake girl (though if I’m going to do cheesecake, it’ll be my classic cheesecake in a graham cracker crust with cherry topping). I find that cheesecake is so rich, and I much prefer my using it as a filling to different bases, like my cheesecake squares with raspberry swirl.
When making this, as usual with my recipes, you do not need a mixer. The cookie dough crumble comes together really easily be hand and the cheesecake filling is made with whipped cream cheese, so it’s very easy to mix. I use a whisk to get out any lumps, so it’s nice and smooth.

I used dairy chocolate chips for this recipe, and that really adds to it. If you don’t have those, you can take a dairy chocolate bar and chop it up into small pieces for the same effect.
This recipe makes an 8-inch square pan. If you want your squares a little thinner, you can make it in a 9-inch square, just check on it a few minutes before the end of the baking time to make sure it doesn’t get overdone. These cookie dough cheesecake squares are ready when the center is set — meaning it doesn’t wiggle any more when you shake it.
While most cakes and bars are best straight out of the oven, sweet cheese baked goods are the exception. They aren’t great when they’re warm or room temp and are much better straight out of the fridge. They also won’t cut well if they’re still warm. Let these cool off completely and then put them in the fridge for a few hours so that they’re totally cold before cutting them.

Cookie Dough Cheesecake Squares
Ingredients
Cookie dough:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ cup oil
- 1 cup light brown sugar
- 1 egg
- ⅓ cup cream cheese
- 1 tsp vanilla extract
- ½ cup dairy chocolate chips
- ½ cup white chocolate chips
Cheesecake layer:
- 8 oz. whipped cream cheese
- ¼ cup sugar
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F and line an 8-inch square pan with parchment paper.
- Place all cookie dough ingredients in a large mixing bowl. Mix with a wooden spoon or your hands until it forms a nice crumb.
- Press 2/3 of the crumbs into the prepared pan and set aside.
- Place all cheesecake ingredients in a bowl and mix with a whisk until smooth. Pour over the cookie dough layer.
- Sprinkle remaining cookie dough crumbs on top of the cheesecake filling.
- Bake for 45-50 minutes or until the center is set. Let cool in the fridge for at least 4 hours or overnight before cutting into squares.
