Coffee Cake Cookies
The crumb topping is a unique and perfectly paired addition to this cookie!
I always say I am not a baker, but then I make all kinds of cookies, Bundt cakes, loaf cakes… For some reason, to me, that’s not baking — though, come to think of it, if that’s not baking, what is?!
I guess when I think of baking, I picture fancy miniatures, piped icing, fondant… you get the picture. But really I should redefine baking in my head, because I love love to make cookies, bars and easy one-bowl cakes. I love to whip up a batch of cinnamon muffins on a Sunday morning, love to let my little girls come into the kitchen and help me.
People always ask me how I am so okay with my girls in the kitchen. Don’t they make a mess? Don’t they mess up the recipes? My answer is yes, they make a mess, but who cares? It’ll get cleaned up. And no, they don’t mess up my recipes. My recipes are so easy that they are (mostly) foolproof.
(But here’s a tip: When I do have little ones “helping,” I always prep everything first “mise en place,” a French term that means having all the ingredients out and ready, so it’s really just a matter of little hands putting pre-measured components into a bowl.)
In any case, the joy I give my girls when I bake with them far outweighs the aggravation I have if they do make a mess or dump the wrong ingredient into the bowl!
The crumb topping on these cookies came about as an afterthought. I’ve always loved baked goods with crumbs. Well, I was baking cookies and had some leftover crumbs from an apple crisp and thought, why not? The results were incredible! The texture and taste of the crumbly top as you bite into the cookie is like an explosion in your mouth. Usually my family is pretty good about making the cookies in the jar last a few days. But I made these on a Sunday morning, and by Sunday mid-afternoon they were gone – so I quickly whipped up another batch that day!
Coffee Cake Cookies
Ingredients
- ½ cup brown sugar
- ½ cup sugar
- 1 tsp cinnamon
- 2 eggs
- 2 tsp vanilla
- ¾ cup oil
- 2 tsp baking powder
- 3⅓ cups flour
Crumbs
- 1/4-1/2 cup oil
- ½ cup brown sugar
- 1 cup flour
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F and line cookie sheets with parchment paper.
- In a large mixing bowl, mix together sugars, cinnamon, eggs, vanilla and oil. Add baking powder and flour and mix until well combined.
- In a separate small bowl, combine all crumb ingredients starting with 1/4 cup oil and slowly add until you get a streusel consistency (should look and feel like wet sand)
- Shape cookie dough into balls and place on prepared cookie sheets.
- Using your thumb, make an indentation in each cookie and place about a teaspoon of crumbs in the indentation (I don’t measure; I just grab a pinch of crumbs with my fingers).
- Bake in preheated oven for about 10 minutes.

Was looking for a cookie recipe that wasnt choc chip- stumbled on these they are OUTRAGEOUS! Each bite had the most incredible cinnamon flavor, almost like a cinnamon bun, but in a cookie!
