Cinnamon Crumb Cake in a Loaf Pan

When a Bundt cake is just too big, this is just the perfect size! This cinnamon crumb cake baked in a loaf pan has an irresistible flavor and texture that’s just right with a cup of coffee!

I love crumb cakes. Something about the mix of textures is just so irresistible to me. I really enjoy a slice of crumb cake with my afternoon coffee. 

I have found many people call any cake baked in a loaf pan a bread (you know, like, banana bread, which is really just banana cake in a loaf pan!). So would you call this cinnamon bread? Crumb bread? I am not sure, but, in any case, I don’t see this as bread — I see it as a cake… just baked in a loaf pan!

This loaf pan recipe is actually an adaptation of a regular crumb cake that I make in a Bundt pan. Bundt cakes (like this lemon-blueberry Bundt cake) are amazing, and they look so nice on the counter, but sometimes I don’t want such a big cake and a loaf pan cake is just the right size — which is why I tweaked my cinnamon crumb cake to work in a loaf pan.

When making cakes in loaf pans I like to use a real pan versus a disposable. For some reason, disposable loaf pans are a slightly different size and I find these real ones (9.5×5) are the perfect size to fit my loaf cake batters.

Cinnamon Crumb Cake in a Loaf Pan

Ingredients

Cake:

  • 2 cups flour
  • ¾ cup sugar
  • ½ cup oil
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 2 eggs
  • 1 cup milk (I used almond milk to keep it dairy free)
  • 1 tsp cinnamon

Crumbs:

  • 1 cup flour
  • 1 tsp cinnamon
  • ¾ cup brown sugar
  • 3 Tbsp oil

Instructions

  • Preheat oven to 350°F and line a (9.5×5-inch) loaf pan with parchment paper.
  • Please all cake ingredients in a bowl and mix until combined.
  • In a second bowl, place all crumb ingredients. Mix until it has a sandy texture.
  • Pour the batter into the prepared pan and sprinkle with the crumbs.
  • Bake for 45-50 minutes.
