Cinnamon Bun Muffins

I love to bake Sunday morning and stock the house up with goodies for the week. My family knows they can always find something fresh and yummy on my counter. I love muffins as they are already perfectly portioned out. Its the perfect grab and go.Â

Cinnamon Bun Muffins
The delicious cinnamon crunch topping, soft inside is a perfect treat!

For the batter
- 3 cups flour
- 1/4 tsp salt
- 3/4 cup sugar
- 3 tsp baking powder
- 1 1/2 cup milk (I use almond to keep it parve)
- 2 eggs
- 2 tsp vanilla extract
- 1/3 cup oil
For the cinnamon mixture
- 1/4 cup oil
- 1/2 cup brown sugar
- 2 tbsp flour
- 1 tbsp cinnamon
Instructions
For the batter
- In a bowl mix all the ingredients together, set aside
For the streusal
- Mix together and drop spoonfuls on top of the muffins and swirl with a knife! (it should look and feel like a wet sand)
- Place in muffin tins 3/4 of the way full
- Bake 350 for 25 minutes
