Cinnamon Bun Muffins

The delicious cinnamon crunch topping, soft inside is a perfect treat! 

I love to bake Sunday morning and stock the house up with goodies for the week. My family knows they can always find something fresh and yummy on my counter. I love muffins as they are already perfectly portioned out. Its the perfect grab and go.

Cinnamon Bun Muffins

Ingredients

For the batter

  • 3 cups flour
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 3 tsp baking powder
  • 1 1/2 cup milk (I use almond to keep it parve)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/3 cup oil

For the cinnamon mixture

  • 1/4 cup oil
  • 1/2 cup brown sugar
  • 2 tbsp flour
  • 1 tbsp cinnamon

Instructions

For the batter

  • In a bowl mix all the ingredients together, set aside

For the streusal

  • Mix together and drop spoonfuls on top of the muffins and swirl with a knife! (it should look and feel like a wet sand)
  • Place in muffin tins 3/4 of the way full
  • Bake 350 for 25 minutes

Freezes amazing.
