Bowtie Pasta with Roasted Vegetables and Chickpeas
This fresh and easy bowtie pasta with roasted vegetables brings color, flavor, and festive vibes to the Yom Tov table!

Rosh Hashanah is almost here, and I’m always looking for recipes that feel festive but are still simple enough to pull together during this busy time, especially in a year like this one, where Shabbos comes out right before and after Yom Tov. Enter bowtie pasta with roasted vegetables and chickpeas!
It has all the right vibes for a Rosh Hashanah table: color, a little sweetness from the roasted veggies, heartiness from the chickpeas, and it can be served warm or at room temperature (aka perfect for Yom Tov meals when reheating lots of food, especially when you’re in shul, can get tricky).
The balsamic glaze adds a touch of tang and makes the vegetables caramelize beautifully, and the bowtie pasta makes it super satisfying. In fact, it’s filling enough to serve as a main for a dairy lunch (add some crumbled feta or shredded cheese!) or as a side dish next to fish or chicken.
As always, when roasting veggies, it’s best to use a real metal baking sheet. Trust me, it’s worth investing in a few these. It makes a huge difference in the texture and flavor of anything you roast in the oven!

Bowtie Pasta with Roasted Vegetables and Chickpeas
Ingredients
- 1 lb. bowtie pasta, prepared according to package directions
- 1 medium zucchini, diced
- ½ red onion, diced
- 1 orange pepper, diced
- 1 can chickpeas, drained
- 1 Tbsp olive oil
- 1 tsp balsamic glaze
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F and line a cookie sheet with parchment paper.
- Place vegetables and chickpeas on prepared cookie sheet. Toss with oil, balsamic glaze, salt, and pepper.
- Bake for about 30 minutes, or until vegetables are roasted.
- Toss vegetables with pasta. Serve warm or at room temperature.
