Blueberry Scone Loaf

I love the texture of a scone but I also love the look of a nice loaf sitting on my counter. So when I fuse both together it’s amazing! Biting into the sweet batter and then getting a burst of tangy blueberry is the biggest treat!

Ingredients

  • 2 3/4 cups flour
  • 3/4 cup oats (any kind)
  • 1 tbsp baking powder
  • 1/2 cup sugar
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 cup milk (I used almond to keep it parve)
  • 1/2 cup oil
  • 3/4 pint blueberries
  • Turbinado sugar for sprinkling

Instructions

  • In a bowl mix the dry ingredients and add the wet. Mix together. You will have a very wet dough. Don't worry this is normal, that’s what gives it the incredible texture.
  • Gently fold in the blueberries
  • Place in a lined loaf pan and sprinkle with the turbinado sugar top with some extra blueberries
  • Bake 400 for 25-30 minute. Checking after 25
