Blueberry Scone Loaf
I love the texture of a scone but I also love the look of a nice loaf sitting on my counter. So when I fuse both together it’s amazing! Biting into the sweet batter and then getting a burst of tangy blueberry is the biggest treat!
Blueberry Scone Loaf

- 2 3/4 cups flour
- 3/4 cup oats (any kind)
- 1 tbsp baking powder
- 1/2 cup sugar
- Juice of 1 lemon
- Zest of 1 lemon
- 1 cup milk (I used almond to keep it parve)
- 1/2 cup oil
- 3/4 pint blueberries
- Turbinado sugar for sprinkling
Instructions
- In a bowl mix the dry ingredients and add the wet. Mix together. You will have a very wet dough. Don't worry this is normal, that’s what gives it the incredible texture.
- Gently fold in the blueberries
- Place in a lined loaf pan and sprinkle with the turbinado sugar top with some extra blueberries
- Bake 400 for 25-30 minute. Checking after 25
