Blueberry Crumb Bars | Easy Summer Blueberry Dessert

These easy Blueberry Crumb Bars feature a buttery oat crumb topping and juicy blueberry filling. Perfect for summer BBQs, brunches, and dessert!

These Blueberry Crumb Bars are everything I love about summer baking! They have a buttery cinnamon oat crust, a juicy fresh blueberry filling, and a golden crumb topping that tastes just like blueberry cobbler in bar form. They’re incredibly easy to make and perfect for backyard BBQs, Sunday brunch, picnics, or simply enjoying with an afternoon cup of coffee.

I don’t usually love fruit in my baked goods. Give me a classic chocolate chip cookie or a solid crumb cake any day! But when it comes to blueberries, all bets are off. Blueberries are my one exception, especially during the summer when they’re sweet, juicy, and practically begging to be baked into something delicious.

Because honestly… if we don’t bake something with fresh blueberries during the summer, did summer even happen!?

Ingredients

For the Blueberry Filling

  • 2 pints fresh blueberries
  • ¼ cup granulated sugar
  • 1 Tbsp cornstarch
  • 2 Tbsp fresh lemon juice

For the Crust & Crumble

  • 2 cups all-purpose flour
  • ⅔ cup old-fashioned oats
  • 1 cup packed light brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup neutral oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 350°F. Line a 9×13-inch baking pan with parchment paper.
  • In a medium bowl, combine the blueberries, sugar, cornstarch, and lemon juice. Toss gently until evenly coated and set aside.
  • In a large bowl, combine the flour, oats, brown sugar, baking powder, cinnamon, salt, oil, egg, and vanilla. Mix until a coarse, crumbly mixture forms.
  • Press about two-thirds of the crumb mixture firmly into the bottom of the prepared baking pan.
  • Evenly spread the blueberry filling over the crust.
  • Sprinkle the remaining crumb mixture evenly over the blueberries.
  • Bake for 45–50 minutes, or until the topping is lightly golden and the blueberry filling is bubbling around the edges.
  • Allow the bars to cool completely before slicing. This helps the filling set and gives you clean, beautiful bars.

Notes

Fresh blueberries give the best texture, but frozen blueberries work too If using frozen blueberries, do not thaw them first. Simply add an extra 1 Tbsp cornstarch to help absorb the extra juices.
