I always viewed canned corn as one of those items that you had to have in your pantry… but you never actually use. We all have a few of those, right? But then my friend introduced me to corn salad and I’ve been making many versions ever since. It’s a great go-to salad since it’s so quick and easy, you can make it in advance and it just gets better in the fridge, and it’s also really budget friendly. I make it for all types of events and meals — barbecues, shalosh seudos, sheva brachos… I’ve already posted this corn salad with pickles, which has just the right blend of zesty crunch, and now here’s another one!

I’m usually not a huge barbecue sauce person, but every so often I crave that delicious sweet-and-smoky flavor. Adding just a small amount to this BBQ corn and avocado salad really takes it up a notch so it’s not your same-old corn salad.

Ingredients

  • 2 15-oz cans corn, drained
  • 1 red pepper, finely diced
  • 1/8 red onion, finely diced
  • 1 avocado, diced
  • 2 Tbsp mayonnaise
  • 1 tsp barbecue sauce
  • 1 tsp spicy mayo
  • Juice of 1 lime (approx. 1½ Tbsp)

Instructions

  • Place corn, pepper, onion, and avocado in a bowl and mix.
  • Add remaining ingredients and toss to coat. It's that easy!

Notes

As with most salads, you can add or swap any of your favorite vegetables!
