Apple Trifle

Yes! I’m tradional that way! I make everything yomtov themed! I absolutely love trifles! They feed a crowd and are so delicious and extremely impressive.the best part? They are super easy to make.  The first time I had trifle I was going crazy how good it was! The combination of cake and soft filling is just perfect! My guests always ooh and ahh when I bring a large Trifle bowl to the table.

Once you get the hang of trifles you can make any combination. I like to make a strawberry shortcake trifle, or a cookies and cream trifle I’ve even made a tiramisu trifle 

When making trifles I usually make the cake part from scratch but you can easily use a cake mix or even purchase store bought cake from your local bakery. 

I used to think you had to assemble trifles right before you serve it, during the meal I would be busy in the kitchen making them, but then I was eating the leftovers one shabbos afternoon and realized it was just as delicious so why can’t I prepare it in advance? But then I took it one step further!! I prepare this trifle weeks in advance and freeze it as is! It defrosts and comes out tasting just as fresh! I’ve tried different trifle bowls over the years and keep coming back to the classic Anchor one. I love that it freezes well and washes well. 

If you want to make this but don’t have a crowd to feed you can easily half the recipe and use any smaller glass bowl you have. I’ve made trifles in small crystal salad bowls.

Ingredients

For the cake

  • 2 eggs
  • 1 cup sugar
  • 1 cup cold coffee
  • 1/2 cup oil
  • 1/2 cup honey
  • 1 tsp vanilla
  • 2 tsp allspice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups flour

For the apple mixture

  • 4 large Cortland apples
  • 1 tbsp cinnamon
  • 1 tsp oil
  • 1/2 cup brown sugar

For the cream

  • 1 instant vanilla pudding
  • 1 16oz whip

Instructions

Cake

  • Mix the first seven ingredients together, add the dry. Note: the batter will be very watery. Don't worry. This is normal.
  • Pour into 9×13 – bake 350° for 50 minutes checking it after 40 to make sure it's done (every oven is diff)

Apple mixture

  • Meanwhile Peel and dice the apples into 1/2 inch chunks
  • In a saucepan sauté the apples in the oil for about 5-7 minutes or until the apples begin to soften.
  • Add the cinnamon and brown sugar.
  • Let the apples cook for an additional 7 minutes to allow them to soften but you don't want it turning into compote. Once done set aside

Cream

  • Add one package of pudding to a bowl with the whip and whip until stiff peaks form.

To assemble the Trifle

  • Once the cake has cooled cut into 1 1/2 inch cubes and place on bottom of Trifle and then some pudding mixture and then apples and repeat until you've used up all your ingredients

Notes

Freezes amazing and can be made in advance
